The Collier Parrilla
Burn hardwood down to embers in an open firebrick hearth, rake them where you want them, and wind two independent grate sections up and down over the top with a handwheel. Hang the big cuts from the rail above. No lid, no thermostat, no dials — heat is controlled by distance and by where you put the fire.

- £1,795. Less than half the price of our smallest oven, and a genuinely serious piece of kit.
- Food-grade 304 stainless. Frame, grate and cable. It will not rust and it does not need painting.
- Open firebrick hearth. Refractory lining on three sides and the floor, open at the front so you can feed and rake without reaching over the food.
- Two independent grates. Sear on one side, hold on the other, cook everything at once.
- Hanging rail above. Seven hooks for ribs, racks and chorizo — cooking in the rising heat while the grate runs underneath.
